·      Proteins are highly complex nitrogenous compound found in all living organisms. Proteins are hydrolyzed in the body to produce amino acids and are essential for growth and repair of the body tissues. They also provide energy when calories are deficient.

·      Sources: Milk, fish, meat, eggs, nuts, dal. Proteins are the structural and functional basis of life composed of twenty amino acid. Proteins are again divided into structural and dynamic proteins.

·      Structural Proteins: Primarily responsible for structure of the body, collagen and elastin are found in bone matrix, vascular systems and other organs, Keratin found in epidermal tissue.

·      Dynamic proteins: Protein like enzyme, hormone, blood clotting factors, immune globulin, storage, immunoglobulin, storage protein.

·      Soyabean seeds possess highest percentage of proteins (30-35%)

·      Prolonged protein deficiency causes severe under nourishment – a serious condition Kwashiorker is resulted mostly in children.
